For this aim, we take care to run through a highly qualified team and the application of modern methods some strict controls that range from raw material and then continue along the production chain, in order to meet the needs of the consumer.

Only the grain that exceeds our stringent checks can be received by the mills and from that moment on, every step of the production process, up to the packaged product, is strictly controlled and traceable, so that the single package of flour can be traced back to the lot of ground grain. The total authenticity of our products is guaranteed by constant checks from raw material to finished product and its purity, sanitary and technological characteristics, rheological and organoleptic properties.

In addition, to ensure the excellent performance that distinguishes our flours, we perform the same tests with the same flours in our experimental planning laboratory bread baking, literally simulating the activity of bakers , from the mixing to the rising to the cooking, carefully observing the behaviour of flour. The products obtained by the baking test are subjected to some rheological and organoleptic tests measured over time to determine characteristics such as the ability to retain the crispness outside, softness, freshness, etc..

Our laboratory is followed by a team of five highly qualified experts.
Numbers are more than 10,000 inspections a year.
